Modern New York street dogs suck because they use inferior hot dogs, unmoored from their tradition. Same goes for pretzels and knishes, if you can even find knishes. But you don't need a Gray's Papaya on the corner to recover the essential.
Just go to the part of the supermarket deli case where they keep Board's Head or Nathan's or some such natural casing dogs. This last part is critical.
Cook these, and eat them.
On a regular white bread bun, not potato bread. Side-sliced, not top.
With deli brown mustard or French's yellow mustard.
And. Nothing. Else.
Apart from all that I have no strong feelings about hot dogs.
Love Chicago dogs; had 'em at a stand-up bar with a brew for lunch. OTOH, love kosher dogs. And I'm with Alex on potato buns.
I remember getting dogs at the stadium when the guy would fork out a dog kept hot in the water, split the bun, add mustard and kraut. For a quarter. OMG, I AM old.
I like a New England style hot dog the best. It's a natural casing grilled dog on a New England roll (flat sides). You can dress it however you want - kraut, chili, whatever. The best thing about Chicago-style dogs is they almost always come with fries and with the all those veggies on top of the dog you can squint and call it a complete meal.

I like em both ways. The Chicago style is a much different thing. But even for a plain mustard on a dog I think I prefer a potato bun.
