The heirloom apple a day is: Reine des Reinettes.

This one has a lovely name, especially when a French-speaking person like my Ma says it.

Mom said they use this one for hard cider. You can tell. It's very tart but also very sweet. Wowzers. It packs a wallop. Crisp flesh, though.
